Daisuke Mori, the owner of WAYA from Tokyo, loves ramen with all his heart and has been eating it 365 days a year since he was young. Of course, he has cultivated a delicate palate by eating ramen all over Japan.
When he opened a ramen shop in Dallas, he not only wanted to serve authentic Japanese ramen, but also researched the seasoning, temperature, salt concentration, spiciness, and toppings that suited the people of Texas.
